California Toddler Salad

1 Avocado
1 Mandarin Orange
1/4 cups of craisins

Cut all ingrediants into whatever size necessary for your child and toss together.

10 Minute Casserole

 4 cups of fresh, or frozen mixed veggies (carrots, peas, beans, corn...anything goes!)
1 cup milk
2 tablespoons flour
2 tablespoons butter
salt and pepper to taste
pieces of COOKED chicken, fish, pork or beef

Melt butter in a large sauce pan and whisk in flour- allow to cook for 1 minute.
Slowly add milk, whisking to prevent lumps. Add salt, pepper and other spices as desired. Cook until sauce begins to thicken.** If too thick (peanut butter consistency) then add more milk, if too liquid then add more flour as necessary. Add veggies, stir and cook until they are heated through (about 5-7 minutes) Add meat Serve warm alone or with cut up toast on top.

Hummus Tortilla

1 8 in. Tortilla
3 TBSP of Roasted Red Pepper Hummus
1/2 Cup of cooked, diced chicken

Spread the hummus on half of the tortilla and add chicken on top. Fold the tortilla in half so the ingrediants are inside and place in a toaster over for 4 minutes. Cut into bite size pieces and serve. One 8 inch tortilla serves 2 toddlers. Serve 1/4 cup of black beans as a side.
